The NRN has recently conducted a detailed case study with Teresa Roche of Kylemore Farmhouse Cheese. Kylemore Farmhouse Cheese, based in Kylemore Abbey, Loughrea, Co. Galway, was developed as an on-farm enterprise by Teresa who returned home to the family farm after many years nursing abroad.
Teresa had the idea to try and add value to dairy enterprise by developing her own farmhouse cheese from their herd of Pedigree Holstein British Friesians. She embarked on a number of business and cheese making courses in the UK and Switzerland before developing her own cheese manufacturing unit on the farm to create her own premium mountain hard cheese similar to the Swiss Appenzeller cheese. Teresa sought LEADER funding to purchase a number of pieces of equipment to help kit out her cheese manufacturing unit and this has helped her enterprise in a number of ways.
